    This is really agreat cookbook for someone like me who still enjoy eating healthy foods, but not ready to go completely into giving up some foods such as whole wheat breads, potatoes, and lentils (beans). Other diet plans would have us to give up these items, but preparing these in the proper way can still get nutritional benefits. An example of this is the receipe of Bean Burgers in place of using ground beef or turkey; this diet encourages us to use most meats (except for fish) sparringly. It encourages us to make quick meals without deep frying, avoiding fast foods, sugars,etc, which many people do much more of anyway.

    I usually eat a boring salad, and this cookbook gave me tons of ideas for different meals. There are some really great fish recipes, and the directions are simple. There’s also a great desert section – we tried the Cinnamon Spice cookies last night that were awesome! The beginning of the book gives some really good information for people who might be trying to decide if they want to follow a Mediterranean diet, too.
